This easy sauce makes any meat look and taste elegant. Prunes help build strong bones, and have lots of antioxidants — so does red wine. You can also use grape juice, and skip the honey.
Serves 4.
16 pitted prunes
16 whole roasted almonds
2 tsp. olive oil
1/2 c. red wine
1 T. honey
1 tsp. lemon juice
- Slit the prunes length-wise and insert an almond into each slit.
- Heat olive oil in a skillet. Add the prunes and gently sauté for about five minutes, until tender.
- Mix together the wine, honey and lemon juice, and add to the pan. Simmer uncovered over low heat for about 10 minutes, until sauce thickens slightly.
- Serve hot as an accompaniment to pork or chicken.
